Will cooking destroy the beneficial nutrients in broccoli?!
Question: I read an article about the beneficial vitamins and nutrients in broccoli, and it even says that it can help prevent some kinds of cancer. But I think this was about raw broccoli. Does anyone know if cooked broccoli produces the same benefits?

Overcooking yes, but lightly steaming will actually help the release the nutrients found in the tougher parts of the stems. Broccoli is broccoli, whether raw or lightly steamed. Their anti-cancer benefets found in the flavanoids they contain can be realized by eating raw, or by eating slightly steamed.

lightly steam and you will be fine, dont boil the life out of any veg.
