How long would it take to lose weight if you eat 1 small meal a day of fruits or vegetables and how much weight would you lose?

Don't do that! If you make your body think you are starving it will actually quit losing weight or lose it more slowly, then when you go back to eating like a normal person, you'll gain weight! Really.
The best way to lose weight is to eat! Six small meals a day. Note: I said small not minuscule. Three meals with veggies, some protein (meat, eggs, fish), and have some carbs at at least one meal (potato - white or sweet). The snacks in between, they are the other 3 meals. Should be fruit, yogurt, veggies & low fat dip. And drink water - lots of it. It helps fill you up as well as keeping your cells healthy. Make sure you get some healthy oil too - olive or canola oil (you can fry an egg or two in it - tastes great).
This way you will lose the weight and keep it off - because you can eat like this forever and stay slim!
Best weight loss per week so your skin doesn't look saggy and wrinkled and your hair won't fall out - 1 - 3 pounds per week (up to 4 or 5 the first week or if you have over 50 lbs to lose).
