How is it possible that for the past month I lost a pound about every other day and I am not starving myself?
I eat about 1,200 calories a day and exercise when I have time? How is it that I am losing this much weight so fast? It takes 3,500 calories to lost a pound or gain a pound.

3500 calories burned loses a pound. If you only take in 1200 a day, but you burn, say, 1500 just by walking around the office, then you're gonna lose weight.
