The most common way uses some calipers where you pinch up your fat in a few various places, (back of arm, stomach, leg) and then measure how much fat you can pinch up!. Most gym assessmetns include this measurement!. It's simple and cheap enough for gyms to purchase the calipers!.
There is a method that involves weight of a person in a pool or bath of water since fat floats and muscle sinks!. That's possible, but I've never known of anywhere that has the abiltiy to do it!.
there's also a device that uses some sort of current where you hold onto two handles and it just electronically reads out a number!. It's very simple, but your hydration status can seriously impact how accurate it is!.
