The body might start eating important parts of your body instead of fat. When i was losing weight rapidly my body was actually eating my muscle and certain organs, not my fat. This is because the body goes into starvation mode.
When you start eating normally again your body doesn't gain it in muscle or organs but in fat. So 80% of the time when you lose weight rapidly you actually are going to end up with more fat in the end. That's why many anorexics take years and years and years to get to the skeleton weight they are... its because they gain weight so much more often than they lose weight.
