This is a common problem and your teeth position could be causing this. They sound as if they are lying lingually, toward the tongue rather than centrally. I often bit my cheek due to my upper wisdom teeth, I got them out and no longer bite my cheek. Constant trauma to your inner cheek is not good. Get your dentist to check out which teeth are cheek biting and possibly get a plan in place. Or stop chewing gum as this may be cheaper than having teeth extracted.

Try using a very large amount of gum. What happens is that the gum is so small and you are not swallowing food, so the mechanics when you do swallow while chewing are different and result in the side of your mouth being sucked into the path of the teeth. You could make sure to keep your mouth blown up with air, or you could insert some springy plastic shields in the sides of your mouth, but I think that by increasing the volume of what you are chewing you will be reducing the likelihood of biting yourself. So I suggest using as many as 5 sticks of gum at a time rather than only one. For economy you might save the wad for later and add only one more stick the next time you want to chew.
Stop chewing gum. If you need something in your mouth that bad then try hard candy.
