My eye doc will not believe I m not diabetic despite two General Practioners monitoring me.
Also I a monitoring my blood sugar levels all week to prove myself to this doctor.

Are you hypertensive for any reason? I think that sometimes hypertension can leave similar pathology in the retina.
Dry eyes can cause intermittent blurriness, but if that was the case I would think that you'd have discovered artificial tears before now.
The only other thing I could think of is monitor your spells of blurriness and see if there is a correlation to when they appear.
